Chitosan of two different qualities was used, a highly de-acetylated commercial chitosan provided by Primex, Germany, and a poorly de-acetylated chitosan obtained by researchers of the Laboratory of Bromatology of the Universidad Nacional del Sur (Argentina).
The Spanish Ministries of Health and of Science and Technology cooperate with CITA through the Agency for Evaluation of Health Technologies and the Institute of Nutrition and Bromatology.
