A los habitantes del sur de Luisiana que hablan un dialecto francés se les llama Cajuns. Son los descendientes de los canadienses franceses expulsados de Nueva Escocia por los británicos en 1755, llamada entonces Acadia (Cajun es la forma acortada de Acadian). When the oil boom took place in Northern portion 1919, the Cajun people needed to struggle in order to stay alive.
I am of French and Native American descent, my family comes from the Cajun people of Louisiana who are known for their hot, spicy food so I have to be careful here not to make my marinades and seasonings too spicy.
A spoken prologue is flimsy and useless; having a dancer narrate what are essentially program notes proclaiming the glory of the Cajun people is a curious way to get things started, especially when Brown and Monte's affection for this culture soon becomes obvious through their jubilant choreography.
