Gai choy (or mustard cabbage) Each leafy head grows to only about 20 inches, resembling a miniature bok choy.
Popular items in the segment are Chinese, Japanese and Thai eggplant; greens such as gai lan, gai choy, choy sum, nira and Chinese celery; and items like pul qua, mo qua, bitter melon and taro root, says Schueller.
There are four other common Asian brassicas you may wish to try: choy sum, a loose-leaf cabbage that is harvested as it begins to flower; dai gai choy, a mustard-cabbage that has large tender leaves which are borne on thick, fleshy stems; gai choy, a milder mustard-cabbage; and gai lohn, a broccoli plant that is sometimes called Chinese kale.
