He prepares numerous special main courses, among them traditional versions of hasenpfeffer rabbit stew, venison medallions, Bavarian meatloaf with warm potato salad, sausages with sauerkraut, oven-baked ``hendl'' chicken, roasted pork shank with potato dumplings and veal steak with mushrooms.
