The highlight of the celebrations is a gala dinner where dishes such as Mauritian Palm Heart Ceviche, Lapsang Souchong Soup and Rhum Baba will be served.
These are more or less strongly pine wood smoke tasting teas from the WUYI mountains in Fujian province, which are the Zhen Shan Xiaozhong teas that grow high up in a relatively cold environment; their Chinese name has been turned into Lapsang Souchong by the Dutch traders and they are greatly appreciated in particular in the UK and in Japan.
The menu should include excellent loose leaf tea - Assam, Earl Grey, Lapsang Souchong and flowering teas are good - black tea woven to roses and carnations - plus delicate sandwiches, warm scones with clotted cream and hand-made preserve, and a sponge cake, either mini individual cakes or one Victoria sponge.
