Charleston Perloo (Pilaf) With Mushrooms 1/2 pound fresh mushrooms, cleaned and sliced thin 1 clove garlic 1 tablespoon olive or vegetable oil 2 tablespoons butter 1 cup thinly sliced onion 1 cup uncooked rice 2 1/4 cups chicken broth 1/4 cup dry white wine 1 1/2 teaspoons salt 1/4 teaspoon white pepper 1/4 cup freshly grated Parmesan cheese 2 tablespoons chopped parsley Saute mushrooms and garlic in olive oil in a 10-inch skillet over medium heat, until mushrooms are tender but not brown.
