In a letter to Transport Minister Edwina Hart, the RMT said it believes "that this change to the current catering arrangements will have a very significant impact on the service and possibly lead to less people using the service which could threaten its future".
RMT general secretary Bob Crow said: "RMT arrived at the talks only to find that ScotRail were not prepared to discuss the issue at the heart of the dispute and that's the dismissal and reinstatement of Scott Lewis.
The pair said the hi-vis vests made them recognisable so RMT members could seek their help.
