Delia uses it to make: Potato, Roquefort and sage bread, pear and walnut salad with Roquefort dressing and Roquefort and leek tart.
Even the thinnest dressing has a cohesive quality, bringing the ingredients together to form something special: the salty piquancy of a Roquefort dressing that coats white chicory and walnuts; the lemon juice and orange-flower water that brings intrigue to a dish of grated carrot; the poppy-seed mayonnaise that makes a salad of new potatoes such a rich delight.
LIGHT ROQUEFORT DRESSING 1 cup low-fat creamed cottage cheese 1/4 cup plain nonfat yogurt 2 tablespoons minced parsley 1 tablespoon EACH lemon juice and minced onion OR chives OR green onions 1 ounce Roquefort OR any blue cheese, crumbled Combine all ingredients, except Roquefort, in a food processor.
