Seppie, tender slivers of Italian cuttlefish, are piled up on a plate with frisee, tomato salpicon and black olives; juicy shrimp arrive on a bed of risotto tossed with creamy manchego cheese, surrounded with a chorizo sauce.
To serve: Spoon salpicon in center of bowl and top with cheese.
It's an informal affair, ripe for a crack at an assortment of shellfish, the salpicon de marisco (seafood salad) or lenguado a la plancha (grilled sole).
