Made from colombard and ugni blanc - grapes normally used to distill Armagnac - its citrusy racy, grapefruit and lemon zest notes go well with the creamy tang of the goat cheese.
Here the juice from the ugni blanc, folle blanche and colombard grapes is extracted, fermented and distilled in swan-necked stills to become fiery, potent eau-de-vie, which, though crude, is unmistakably Cognac in the making.
