It says that only Vacherin and Gruyere cheeses mixed with Fendant wine and a dash of kirsch (cherry) schnapps make for the true fondue.
In addition to the classic Raclette, there are a number of fine examples to choose from, including Appenzeller, Tete de Moine and Vacherin Fribourgeois, a cheese produced in both Switzerland and France.
Its old, open fireplace is welcoming, and just as welcome is the baked and succulent Fondue Vacherin Mont d'Or--a fondue made with the baked rich cow cheese known as Vacherin Mont d'Or.
