Two delicious lamb dishes Lamb chump chops with yoghurt and mint These are good to eat with a cucumber salad dressed with white wine vinegar and chopped fresh dill, and fragrant brown basmati rice.
MOROCCAN LAMB AND COUS COUS (Serves four)4 lamb chump chops or steaks (or hicken)2-4 tsp Harissa paste2 tbsp olive ilA good handful of sultanasA good handful of cashew nuts 6oz/170g cous cous1 x 14oz/400g tin of chickpeas, drainedand rinsed8 fl oz/250ml hot lamb or chicken stock (1 cube)Salt and freshly ground black pepperA handful of mint leaves, roughly choppedGreek yoghurt to serve MethodTrim and then snip each lamb chopthrough the skin to stop it curling up during cooking.
Loin chops have a small T bone in the centre, and chump chops have a small round bone (there's not a lot of difference between them taste-wise).
