Clabbered milk To make clabber: allow about a cup of skimmed raw milk to sit at room temperature in a glass jar, loosely covered with a cloth, for a few days until it thickens to the consistency of yogurt.
Spencer alluded to the traditional use of clabbered (sour) milk to make coeur a la creme, and it makes perfect sense that a French dairy farm wife would create a simple, sweet dessert from the one raw material to be had in abundance.
The second resulted from a container of Jevity with Fiber, a medical nutritional product, that was described as clabbered, with an abnormal odor.
