1 ounce clarified butter 12 ounces sweetbreads, poached, cleaned and trimmed 1 tablespoon all-purpose flour 1 potato, peeled, cut into small dice and blanched 2 ounces chanterelle mushrooms, sliced 2 ounces cremini mushrooms, sliced 1 ounce morel mushrooms, halved Salt and freshly ground black pepper to taste
Alford is also partial to serving mushrooms on Thanksgiving -- a mix of oyster, shiitake, cremini sauteed with a little butter, shallots and fresh herbs and finished with a bit of madera or cognac and more fresh herbs.
Add 2 cups sliced cremini mushrooms and saute until mushrooms begin to brown.
