| DIRTY RICE (Serves 4) One 14-ounce package Gimme Lean or other vegan sausage, crumbled, or 1 1/2 caps rehydrated Textured Vegetable Protein (TVP) 2 Tablespoons homemade dock (or as needed) or 1 Tablespoon oil 3/4 cap minced boil peppers 1 cup minced onions 3/4 cup minced celery 1 Tablespoon minced garlic Additional homemade stock as needed 1 teaspoon Basic Cajun Seasoning (page 19) 1/4 teaspoon black pepper 4 caps cooked rice 1/2 cap chopped scallions Salt to taste Imagine feasting on: Jalapeno Jerk Baby Back Bibs, Jake's Barbecued Veal Brisket, Baltimore Pit Beef, Grilled Salmon with Salsa Verde, Grill-Blackened Red Fish, Pinto Bean Quesadillas with Jalapeno Cheese, Grilled Asparagus with Portobellos, Thelma's Dirty Rice, Smoke Roasted Apple Crisp, or Cinnamon Grilled Peaches. Like wonderful smothered pork chops, distinctive dirty rice, and, for those who have acquired the taste for it, exceptionally good (chitlins) chitterlings - the latter two served in bowls, and only on Thursdays. |
