A good French bread will have a creamy mouth feel and an open texture.
The modern favourite, the rib-eye, was the unfashionable cousin but, with its marbling of fat and open texture, if I'm to have a steak, this is often the one I'll go for.
Open texture is when there may be "borderline cases" in the future application of a concept (or a predicate).
