In my humble opinion, the rissoles and scotch eggs from Dorothy's in Caroline Street are out of this world, and if you go a little further on to Cardiff Market, the cockles and other seafood (including laverbread) are incredible. Here are some of the recipes that feature in the book: Irish Mirror Comment AMY HUBERMAN: GRANDMA HILDA'S SALMON RISSOLES Ingredients: 2 tins of red salmon 2 large eggs, beaten 6 grinds of fresh black pepper 1 small onion, finely chopped 1 teaspoon of dried parsley 6 dessertspoons of medium matzo meal Method: Empty salmon into bowl and flake with a fork.
