The spring onion mash is not dissimilar to the Irish classic potato dish colcannon which has cooked, shredded cabbage through it instead of spring onions, or as well as them, depending on which recipe you follow.
POTATO SALAD (Serves 4-6) Ingredients 1kg new potatoes 125g smoked streaky bacon 1tsp vegetable oil 6 spring onions 175ml mayonnaise Salt and pepper Method Halve the potatoes and cook in lightly-salted boiling water until tender.
Stir in the chicken and most of the spring onion greens to gently heat through, then serve ladled into bowls and scattered with the remaining lime zest.
