Essentially it's a terrine of slow-cooked ham pieces or shreds set into a tasty aspic made from the cooking liquid, into which have been mixed a few tablespoons of finely chopped parsley and some capers.
The chicken liver and pork terrine on the other side of the table was a slab of terrine cut into two neat triangles, with not-quite-enough fluffy melba toast, plenty of colourful salad garnish and a drizzle of rich and fruity Cumberland sauce.
