1. Any of various tropical American vines of the genus Vanilla in the orchid family, especially V. planifolia, cultivated for its long narrow seedpods from which a flavoring agent is obtained.

CREME BRULEE Serves 5-6 Ingredients: 45mls double cream; 450mls semi skimmed milk; 2 vanilla pods; 125g castor sugar; 12 egg yolks; Extra sugar for glazing Method: Split the vanilla pods and scrape out the seeds.
If you don't have vanilla pods, a few drops of vanilla essence will work just as well.
Instead of throwing away expensive empty vanilla pods keep them in a sealed jar covered with caster sugar to infuse the sugar with real vanilla flavour.
