Nightshades contain an alkaloid (organic compound) called
solanine. In small doses such as a single serving, it doesn't affect most people.
But the green serves as a visible marker that toxic
solanine is present.
*Tomatoes contain small quantities of a toxic substance known as
solanine that may trigger headaches.
Tubers may contain toxic alkaloids as

BRIAN replies: The odd potato will do no harm but raw and unripe potatoes, as well as potato plants, often contain
solanine, a mild poison.
It is best to avoid eating green fruits from this group, as some species may contain
solanine, a poisonous principle.
Conner, "Effect of light on
solanine synthesis in the potato tuber," Plant Physiology, vol.
The active compound in sodom apple is
solanine. In the field experiment the 100% treatment and 50% treatment had the highest mean height.
Let them dry in the sun, but bring potatoes in before an hour has passed so they won't develop excess
solanine. Dirty squash may be gently cleaned with a solution of one part bleach to 10 parts water.
Comment: Nightshades contain
solanine alkaloids, which have been found anecdotally to be a triggering factor for joint pain in some people with osteoarthritis, as well as a cause of various other symptoms in susceptible individuals.
