So I've made the filling for the pie in the same way you would normally but I've substituted the lamb mince for puy lentils and added lots of additional vegetables, so you get a rich, warming filling with lots of bite and texture to it.

I use puy lentils; smaller than regular lentils, they are bluish black in colour, high in iron and magnesium and provide valuable antioxidants, similar to that found in blueberries and black grapes.
