Salsify is often referred to the <B vegetable oyster due to it's subtle flavour, better than parsnip

Salsify is one of the rarer vegetables - the vegetable oyster, as it's known, owing to its taste - and went perfectly with the crispy, flavoursome potato, although the truffle cream was too subtle to add much to the dish.
